ingredients:
4 bell peppers
2 cans diced tomatoes
1 lb lean hamburger
1 medium sized onion, diced
salt and pepper to taste
1/2 cup shredded cheddar cheese
1 cup rice
preheat oven to 350 degrees
1. brown meat in saucepan.
2. add onion to the saucepan. cook until onion start to become transparent.
3. add diced tomatoes. continue to cook until mixture starts to boil.
4. add rice to saucepan. cook for approx 10 minutes or until rice begins to get tender.
5. add salt and pepper to taste.
6. cut tops off of green peppers and clean the insides. save the tops of the peppers. put bottoms in a 9x9 glass pan.
7. fill green peppers halfway with mixture from saucepan.
8. add little bit of cheddar cheese to the peppers.
9. fill peppers with remaining mixture to the top of the peppers.
10. add a little cheddar cheese to the top of the mixture.
11. place tops of peppers on top of mixture and cheddar cheese. cook until peppers are tender (approx 45-60 minutes).
