View full recipe
.Line a baking sheet with waxed paper; set aside.
.In a medium bowl, mix peanut butter, butter, and confectioners’ sugar with hands to form a smooth stiff dough. The quantities listed above may not be exact but you are looking for a nice soft dough but you also don’t want it too get too sweet so be careful not to add too much sugar too quickly. Shape into 1-inch balls of dough. Place on prepared pan, and freeze.
.Melt butter and chocolate together in a metal bowl over a pan of lightly simmering water- double broiler. Stir occasionally until smooth, and remove from heat.
.Remove balls from freezer. Insert a wooden toothpick into a ball, and dip into melted chocolate. Return to wax paper, chocolate side down, and remove toothpick. Repeat with remaining balls. Refrigerate or freeze for 30 minutes to set. Be sure to keep re-warming the chocolate because you cant do them all without the chocolate cooling down too much.
